peaches n cream

I really am going to miss all the fresh picked fruit that comes with visits to the farmer's market or a friend's backyard. Especially our local peaches. My goodness these are good. My favorite way to eat them is sliced thin with a little bit of milk. Otherwise known as Peaches n Cream.
 Thinly slice one peeled peach into a bowl. (You could leave the skins on if you want.)
 Pour in desired amount of milk, almond milk, or rice milk. Perfect as is. You don't need to add sugar.
Serve and enjoy! How easy is that?! I let mine sit for a bit so that the milk gets peach-flavored.

making your own carrot juice blends

I actually don't have my own juicer, but borrow one from my neighbor because she hardly ever uses it. I juiced about 10 pounds of carrots and ended up with two of these large mason jars. Once you've juiced your carrots and any other fruit you may want to use for blending, this is how you start. This is for 1-2 servings.
Start with 1 Cup Carrot juice

½ C Pineapple juice
½ C Apple juice

Add different juices and play around until you find one you like the best and adjust to desired level of sweetness. Other juice options are:
½ Cup orange juice, pear, strawberry juice, grape juice, grapefruit juice, mango, peach, berries, the combos are limitless.

If you are not a fan of the carrot juice flavor, pineapple juice covers the flavor. If you want to add more veggies to your carrot juice, the most popular additions are 1-2 celery stalks, 1/2 of a fresh beet root, and/or 4 inches of seedless cucumber. Some people add fresh grated ginger, but I don't like that..

easy fruit compote


I got this super easy and delicious recipe from my friend Jenny. When she told me there was basil in it I was not interested in trying it at all. Why would I add basil to fruit?! Well, after I tried it, I was hooked. It was all I could do not to finish off the entire bowl.

Here's what you do:

1.  Take your favorite fruits and dice it up. For our family of 5 I diced up about 1/2 cup of each fruit. The one pictured above has red grapes, strawberries, honeydew, cantaloupe, watermelon, bananas, and pineapple. Any fruit will do. I ended up with 5 cups of fruit. Place in serving dish.
2.  Chop a bunch of fresh sweet basil and sprinkle if all over the chopped fruit.
3.  Drizzle with honey. For 5 cups of fruit, I probably drizzled 2-3 Tablespoons. Mix all together and serve. I was nervous how my family would react to an herb in their fruit, but they loved it! You should give it a try. This is now one of our favorite desserts. This can accompany any meal, be a great breakfast along with toast and yogurt, or a great dessert.
